Dimyat is an ancient white grape variety primarily associated with Bulgaria and the eastern Balkan Peninsula. While historical legends once suggested Egyptian origins, modern DNA profiling indicates it is a natural cross between Gouais Blanc and an unidentified Balkan variety. It is most extensively cultivated in Bulgaria’s Black Sea Coast, Danubian Plain, and Thracian Lowland regions. The grape is known for its high yields and late ripening, producing wines with a light-to-medium body and refreshing, crisp acidity. Its aromatic profile is characterized by delicate white flowers, citrus zest, green apple, and ripe pear, sometimes developing honeyed or exotic notes like lychee in warmer vintages. Dimyat is highly versatile, used for fresh dry table wines, traditional method sparkling wines, and even sweet late-harvest styles. It is also a traditional base for Bulgarian brandy (Rakia).
