Stavroto is a red grape variety native to Greece, primarily cultivated on the island of Crete. Historically used in blends to contribute color and structure, Stavroto (sometimes referred to by local synonyms) is now experiencing a resurgence of interest. The vines are known for their moderate vigor and adaptability to the Cretan climate. Stavroto wines are characterized by their deep ruby color, firm tannins, and medium-plus acidity. The aromatic profile often showcases dark fruit notes like black cherry and plum, accompanied by hints of dried herbs and spice. These wines typically benefit from some aging to soften the tannins and allow the flavors to integrate.
