Assyrtiko is a distinguished white grape variety originating from Greece, most notably the island of Santorini. Its cultivation has expanded to mainland Greece, including Attica and Crete, and is gaining traction in vineyards worldwide. The grape thrives in low-fertility, well-drained soils; Santorini's volcanic ash and pumice provide an ideal environment, with vines often trained in a basket shape (kouloura) for wind protection. Assyrtiko wines are characterized by their naturally high acidity, moderate alcohol levels, and a distinctive mineral structure, enabling excellent aging potential and the development of complex tertiary aromas. The aromatic profile encompasses lemon, lime, green apple, white stone fruit, citrus blossom, and pronounced saline, mineral, and flinty notes. Assyrtiko's versatility makes it an excellent pairing for seafood, grilled fish, shellfish, oysters, fresh goat cheese, salads with citrus dressings, and sushi. Its acidity and minerality also complement richer fish dishes and vibrant Mediterranean cuisine.
