Cornalin is a red grape variety indigenous to the Valais region of Switzerland, where it is highly regarded for producing wines that reflect the unique terroir. Often referred to as Cornalin du Valais, it thrives on steep, sun-drenched slopes. The resulting wines are typically medium- to full-bodied, characterized by firm tannins and a refreshing acidity, allowing for aging. Cornalin's aromatic profile is complex, featuring red and black fruit notes such as cherry, raspberry, and blackberry, complemented by floral nuances, dried herbs, and a distinctive peppery spice. Oak aging can impart additional layers of tobacco and vanilla. Winemakers often employ gentle extraction techniques to preserve the grape's inherent fruit purity. Cornalin pairs well with grilled red meats, game, mushroom-based dishes, mature cheeses, and traditional alpine cuisine. While primarily found in Valais, some plantings exist in the neighboring Aosta Valley of Italy.
