Vitovska Grganja is a white grape variety indigenous to the Karst plateau (Kras) spanning the Italy–Slovenia border. It has a long history in the limestone-rich soils of the northeastern Adriatic. Traditionally cultivated in small family vineyards, Vitovska Grganja flourishes in stony, well-drained terrain, yielding relatively small harvests with concentrated flavors. The resulting wines exhibit medium body, pronounced acidity, and a distinct mineral backbone. Phenolic grip can be noticeable, particularly in skin-contact versions. The aromatic profile typically features white flowers, green apple, pear, and saline or flinty mineral notes, often accompanied by subtle herbal or almond hints. Styles range from crisp, youthful wines to more textured, skin-fermented examples displaying amber hues and tannic structure. Ideal food pairings include shellfish, grilled fish, prosciutto and other cured meats, fresh cheeses, and vegetable-based Adriatic dishes. Serving chilled enhances its freshness and mineral character.
