Listán Negro is a red grape variety with a long history in the Canary Islands, thought to have been brought by the Spanish. It flourishes in the volcanic soils and dry, windy climate, where low yields result in concentrated flavors. Vine training varies from low bush vines to trellised systems, often on steep terraces. Listán Negro wines are typically medium-bodied with moderate alcohol, soft to moderate acidity, and fine tannins. The aroma profile includes red and dark berry fruits like strawberry, raspberry, and cherry, complemented by volcanic minerality, dried herbs, and subtle earthy or smoky notes; some wines show saline or laurel hints. Styles range from fresh, light reds and rosés to more structured, oak-aged wines and traditional field blends. It pairs well with grilled fish, medium-textured roasted meats, Canary-style papas arrugadas with mojo, tomato-based stews, and tapas featuring cured pork or roasted peppers.
