Pedro Ximénez is a white grape variety primarily used to produce intensely sweet, dark, fortified wines. Believed to be of Iberian origin, it thrives in the hot climate of southern Spain, particularly in Andalusia. The grapes are often sun-dried after harvest to concentrate their sugars, resulting in wines with exceptional sweetness and viscosity. Key regions include Jerez and Montilla-Moriles, where Pedro Ximénez achieves its greatest expression. While most famously used for sweet Sherry styles, small quantities are also grown in Australia and California. The wines exhibit a rich profile of dried fruits like figs, raisins, and dates, along with notes of molasses, caramel, and chocolate. Oxidative aging contributes to flavors of coffee and tobacco. Pedro Ximénez pairs beautifully with blue cheese, chocolate desserts, ice cream, and is a classic dessert wine.
